Start the day lists every loaf, bun and cake to make or set for today, each with what is on the shelf, what sold yesterday and a suggestion from what was left over lately: about 27 soft white loaves left over, so try 15. Start the day tops the shelf up to each figure through the stock ledger.

Late in the afternoon the stock list opens on what needs attention: lots expiring, and the burnt cheesecake under its minimum of 2. Every tray carries its date, so the slices that run out tonight are flagged with their days to go while there is still time to sell them.

The day end adds the day up: gross and net, profit, every tender and every category, and the cash each till should hold against what was counted. Close the day and its takings post to the books as one journal, the way a bookkeeper posts the Z-report; its receipts wait for the month's consolidated e-Invoice to LHDN.
